Ingredients

  • •315 ml lukewarm milk
  • •2 tsp instant yeast (or 7 g)
  • •1 tbsp honey
  • •150 g semolina (plus extra for dusting)
  • •350 g all-purpose flour
  • •30 g butter, softened
  • •1 tsp salt
  • •1 onion, finely chopped
  • •1 tbsp butter
  • •1 tbsp olive oil
  • •400 g chicken breast, diced small
  • •1 tsp salt (adjust to taste)
  • •2 tsp garam masala
  • •1 tsp turmeric
  • •2 cloves garlic, crushed (or 1 tsp garlic paste)
  • •1/4–1/2 tsp cayenne pepper (to taste)
  • •1/4 tsp ground cinnamon
  • •2 tbsp tomato paste
  • •2 tbsp sweet soy sauce
  • •60 ml water
  • •125 ml cream
  • •2 tbsp fresh parsley, chopped
  • •150–200 g grated cheese (mozzarella or a pizza blend)

Instructions

  1. 1Mix lukewarm milk, yeast, and honey in a bowl. Rest 5 minutes until foamy.
  2. 2Add semolina, flour, butter, and salt. Knead 10–12 minutes until smooth and elastic.
  3. 3Cover and let the dough rise for 1 hour or until doubled in size.
  4. 4Heat butter and olive oil in a pan. Sauté the chopped onion until soft.
  5. 5Add diced chicken, salt, garam masala, turmeric, garlic, cayenne, and cinnamon. Cook 5–6 minutes until chicken is cooked through.
  6. 6Stir in tomato paste, sweet soy sauce, and water. Mix well.
  7. 7Add cream and simmer until the mixture thickens.
  8. 8Stir in parsley and a handful of cheese (optional). Let the mixture cool completely.
  9. 9Divide dough into 9 balls. Roll each into a small circle. Lightly dust/coat with semolina.
  10. 10Spread the cooled chicken mixture on each mini pizza and top with grated cheese.
  11. 11Rest the assembled mini pizzas for 30 minutes.
  12. 12Bake at 200°C (400°F) for 12–18 minutes until golden and bubbly.
